The next time you order a takeaway, it might be flown directly to your door. Today, Deliveroo has launched its first drone delivery service for customers in Ireland. Drones travelling at speeds of up to 50 miles per hour (80 kph) will carry food from restaurants to customers in as little as three minutes. Upon arrival, the drone will hover above the customer's home and gently lower the food to the ground on a tether before returning to the delivery hub. Launching in Blanchardstown, on the outskirts of Dublin, the trial will cover a 1.8-mile (3km) radius, reaching up to 150,000 people.

But the foodservice industry may be another matter, as it isn't usually considered to be the fastest sector when it comes to adopting new technology. Whilst the industry's disruption by the gig economy did indicate new pathways, the recent stock flotation of food-delivery startup Deliveroo has found itself beset by the same ESG issues over workers' rights that have long dogged the likes of Uber and Lyft. While it may not solve the sort of labour disputes faced by Deliveroo, AI-powered automation is what foodservice should be taking note of, and in some cases already is.

Shukran Best Kebab – the finest Turkish restaurant in the Seven Sisters area of north London, according to some people (although it is surrounded by fierce rivals to the throne) – joined Deliveroo two years ago, and back then it seemed like a no-brainer. The sense that something was wrong dawned gradually. Kurt, a gregarious, bearded man in his early 40s, who left his central Anatolian home town in 1995 and used his love of food to build a new life in the UK, ran the numbers: with Deliveroo's commission amounting to 35% plus VAT on every order, he was forced to increase his prices to avoid losing money on each sale.

Amazon's controversial Rekognition computer vision technology is now being used to rid food sites of surprise dick pics. The London-based food delivery service Deliveroo has a definite content moderation challenge. It seems that when there's a problem with a food order, Deliveroo customers often send in a photo of the food with their complaint. Or they arrange the food into the shapes of private parts. Deliveroo's employees, it turns out, don't necessarily want to see stuff like that. So the company uses Rekognition to recognize unsavory photos and blur or delete them before they reach human eyes.

But as so often happens with new platforms, a secondary and less visible revolution is rippling across the restaurant industry thanks to the rise of virtual kitchens. London-based Taster is an example of how the intersection of meal delivery services, artificial intelligence, and data is creating opportunities that threaten the restaurant industry with even greater disruption. While meal delivery services initially seemed like a boom for local restaurants, it is virtual kitchens -- with their ability to optimize and automate -- that may ultimately win the food wars. Taster was founded two years ago by Anton Soulier, an early employee of Deliveroo who wanted to take this food transformation further. "I thought there was a big opportunity to build a food company on top of these platforms," he said.
