English spirits producer Circumstance Distillery created the first gin using artificial intelligence (AI) last year, called Monker's Garkel. The Bristol‐based producer partnered with technology scientists Tiny Giant and Rewrite Digital to build the AI, called Ginette, a neural network and the'brains' behind the expression. Ginette was programmed by the team to analyse thousands of botanicals, understand gin recipes and learn a database of more than 500 gin names. The AI then selected a "fragranced" gin – and that was how Monker's Garkel came to be. Bottled at 40% ABV, Monker's Garkel is made with juniper berries, coriander seed, angelica root, raspberry leaf, gooseberry, prune, clementine zest, orange zest and marigold.


AI designed this gin, but would you drink it?

Two years ago, I owned a bar with over 300 different gins -- one of the largest collections of juniper-flavored spirits at any establishment in the United States. None of those gins was designed by a computer, a fact that my bartenders would likely have explained was for the best: A gin's non-juniper botanicals are what make it distinctive, and the most popular recipes have traditionally come from experienced distillers. But now that we're in the AI-as-possible-gourmand era, what if a trained AI system took over the process of formulating, naming, labeling, and even marketing a new type of gin? Could artificial intelligence -- aided somewhat by humans -- create a viable product? Somewhat surprisingly, the answer is "yes." This weekend, Bristol, UK-based Circumstance Distillery and creative technologists Tiny Giant debuted Monker's Garkel as "the world's first gin created by artificial intelligence," and though I was skeptical about AI's actual role in the project, machine learning had a greater influence in the outcome than might be imagined.

This new combination of marine learning and human creativity have demonstrated that by analysing hundreds of botanicals properties against recipes and 500 gin brands, Ginette was able to conjure the name Monger's gargle and produce a "fragranced gin drink". Monker's Garkel is created using Juniper berry, coriander seed, angelica root, raspberry leaf, gooseberry, prune, clementine zest, orange zest, and marigold with an abv of 40%. Trained by the team to analyse thousands of botanicals, understand gin recipes and learn a database of more than 500 gin names. Ginette went through a process of creating a huge catalogue of brand names, designs and botanical recipes before deciding on'Monker's Garkel'. Circumstance Distillery are gearing up to launch the world's first gin created using an artificial intelligence (AI) programme.

An automated algorithm created the labels using a curated set of styles, colours, textures and fonts, which was then formulated by local artist Tim Sutcliffe.

Psychopomp in Kingsdown has collaborated with Tiny Giant and Rewrite Digital to create Ginette, a neural network capable of creating her own gin from scratch, including the recipe, name and label. The result is Monker's Garkel, a gin containing juniper berries, coriander seed, angelica root, prune, gooseberry, raspberry leaf, clementine zest, orange zest and marigold flowers.
